Swissôtel's Australian property had grand plans for a stunning new lobby bar and reception space. Our challenge was to conceptualise a food and beverage concept that harmonised seamlessly with the space and then brand it accordingly.

↳ Design Solution

Drawing inspiration from the building's 1920s architectural details, the presence of a black grand piano, and lush greenery adorning the space, we reimagined a classic palm court reminiscent of the grand hotels of Europe, infused with a touch of Sydney flare. This ambitious project involved crafting a comprehensive food & beverage concept, including a sample food menu, cocktail direction, in-room dining strategy, event activations, and overarching brand strategy. Collaborating closely with a wine consultant, spirit consultant, and the hotel's head chef, we meticulously developed the vision for the space, ensuring every aspect resonated with the desired ambiance and culinary experience.

To infuse the brand with personality and charm, we sought the talents of NYC illustrator Eliza Fedewicz. Through her artistry, a captivating cast of characters was brought to life, embodying the convivial spirit of a good hotel bar and injecting the brand with a touch of cheek and whimsy.
